Pretty Things Once Upon a Time, 15 November 1901, KK

Pretty Things Beer and Ale Project, ovvero Dann Paquette e sua moglie Martha, birrai “zingari” che non hanno impianti fissi ma si appoggiano di volta in volta a diversi birrifici tra i quali, come in questo caso, la Just Beer. La serie di birre “Once Upon a Time” (“C’era una volta..”) è stata creata in collaborazione con lo storico Ron Pattinson, abile ricercatore di antiche ricette e “brewsheet” dal passato. Quello che Dann e Martha fanno non è altro che riprodurre fedelmente le istruzioni recuperate da Patterson. In questo caso specifico, il “brewsheet” porta la data del 15 Novembre 1901, e l’indicazione “K” : questa sigla indicava birre che dovevano poi maturare in timi; col tempo, le “K ales” scomparvero e vennero sostituite dalla denominazione generica di “strong ales”, indipendentemente dal fatto che avessero o no una seconda fermentazione. Ottimo l’aspetto, un bel nero con un cappello di schiuma nocciola, solida, fine, cremosa e molto, molto persistente. Al naso eleganti sentori di malto tostato, caffè, leggera liquerizia; con il tempo emerge una luppolatura leggermente “terrosa”, data dai luppoli inglesi utilizzati (Kent Goldings e Bramling Cross). Davvero molto morbida in bocca, quasi vellutata, con corpo medio e bassa carbonatazione. Troviamo un bell’equilibrio di caffè, malti tostati, leggere note fruttate ed erbacee di luppolo. Vira più decisa sull’amaro a fine corsa, lasciando un retrogusto molto lungo e morbido, dove convivono note vegetali e di tostatura. Birra ben fatta e gustosa, il risultato è una sorta di porter abbondantemente luppolata.

The "Once Upon a Time" historical beer series is made together with beer historian Ron Pattinson. This is just a straight re-brewing of a beer brewed on a specific day from the past and based on brewsheets found by Pattinson. Originally, this was brewed on November 15th, 1901, London, England KK as a "Burton Ale" that was meant for aging in vats at the brewery. Brewed with Kent Goldings and Bramling Cross hops, it pours a lovely black color with a rocky creamy tanned head. In the nose there’s an elegant mix of roasted malts, coffee, licorice and some earthy hops. Exceptionally smooth and velvety mouthfeel, low carbonated. Body is medium. Well balanced taste with roasted malts, coffee, grass and some fruit. Finish is more bitter and leaves a smooth bitter aftertaste with grass and roasted malts. A very tasty and pleasant beer which we really enjoyed. A very interesting mix between a
porter and a black IPA. 65 cl. bottle, 7.8% ABV, 11.90 €

  1. Uno dei birrifici Americani che più mi ha sorpreso a livello qualitativo. Ho bevuto la loro saison e la bitter, ricette innovative ma che seguono la tradizione. Birre molto beverine e piacevoli, pulite, con una ottima personalità.
